In recent years there has been an increasing demand for refined sugar supplied in a liquid form for use in the production of beverages, candy,baked goods, and other foodstuff. Although liquid sugar can be prepared by remelting highly refined sugar, with or without additional treatment,direct production of the liquid sugar at the refinery avoids the costly crystallization and dissolution steps. Liquid sugar can most economically be prepared from thick liquor and lower grade available at the refinery.
For producing liquid sugar directly, the processed refinery liquors,previously decolorized with carbon and/ or ion exchange resins, are subjected to additional ion exchange resin treatment for the purpose of deashing and decolorizing the liquor further. When the desired final product is liquid sucrose, it is customary to deash/decolorize the processed refinery liquors with mixed bed ion exchange resin units containing a weak cation resin and a strong anion resin.The WAC cation resin is required in order that sucrose inversion is minimized, and the strong anion resin to assure good deashing and additional decolorization is achieved. When the desired final product is a liquid sugar containing varied levels of invert sugar, the processed refinery liquor is treated instead with a SAC resin and then with a WBA anion resin. The invert content of the liquid sugar can be controlled by regulating the temperature and the flow rate at which the processed refinery liquor is passed through the SACcation resin.
As the true value of ion exchange as a unit operation is rapidly becoming understood and accepted by cane sugar processors worldwide, it is evident that its future is bright indeed. Not only have sugar decolorization resins allowed the refiner to improve upon the overall operation and economics of the refining process, but have also brought about a general improvement in the sugar quality that is now available commercially. Were it not for ion exchange resins, it is difficult to visualize how. the high quality liquid sugars presently familiar to all of us could be produced economically using other techniques presently available to the refiner.
